    Prepare the Ingredients

    Rinse the chicken thighs under cold water and pat them dry with paper towels. Season with salt and black pepper. Chop the garlic, onion, and bell pepper. Dice the tomatoes.

Cooking

    Brown the Chicken

    In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs skin-side down and brown for about 5 minutes until golden. Flip and brown the other side for another 5 minutes. Remove from skillet and set aside.

    In the same skillet, add the chopped garlic, onion, and bell pepper. Sauté for about 3-4 minutes until the onion is translucent.

    Add Tomatoes and Liquids

    Add the diced tomatoes to the skillet along with the white wine and chicken broth. Stir well to combine.

    Add Herbs and Chicken

    Stir in thyme and rosemary. Return the browned chicken thighs to the skillet, nestling them into the sauce. Bring to a simmer.

    Cover the skillet and reduce heat to low. Let it cook for about 30 minutes until the chicken is cooked through and tender.
