Ingredients for Brotte, Côtes du Rhône Blanc, 2022

Method

Directions for Making Brotte, Côtes du Rhône Blanc, 2022

  1. 1

    Prepare the Grapes

Wash the white grapes thoroughly under cold running water. Remove stems and any damaged grapes. Place the grapes in a large bowl or fermentation container.

  2. 2

    Crush the Grapes

Using a clean potato masher or your hands, crush the grapes gently to release their juices. Aim for a mix of pulp and juice without creating too much foam.

  3. 3

    Make the Sugar Solution

In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat until the sugar is fully dissolved. Allow to cool before adding to the grape mixture.

  4. 4

    Mix the Ingredients

Add the cooled sugar solution and 2 tablespoons of lemon juice to the crushed grapes. Stir gently to combine.

  5. 5

    Add Yeast

Sprinkle 1 teaspoon of wine yeast over the grape mixture. Stir gently to incorporate the yeast evenly throughout the mixture.

  6. 6

    Fermentation

Cover the fermentation container with a clean cloth or lid (with an airlock, if available) and let it sit at room temperature for 5-7 days. Stir the mixture daily to promote fermentation.

  7. 7

    Optional Oak Aging

If desired, add 0.5 cup of oak chips to the mixture during the fermentation process for added flavor. You can also skip this step if you prefer a fresher taste.

  8. 8

    Strain the Mixture

After fermentation is complete, use a fine mesh strainer or cheesecloth to strain the liquid from the solid grape matter. Discard the solids.

  9. 9

    Dilute and Bottle

Dilute the strained liquid with 1 cup of bottled spring water if desired. Then, bottle the wine in sterilized bottles, sealing each tightly.

  10. 10

    Age the Wine

Store the bottled wine in a cool, dark place for at least 3-6 months to allow flavors to mature before tasting.
