    Prepare the Vegetables

    Wash and peel the carrot. Grate it or cut into thin julienne strips and place it in a large mixing bowl.

    Add the Red Bell Pepper

    Remove the seeds from the red bell pepper, and slice it into thin strips. Add it to the bowl with the carrot.

    Shave the Onion

    Thinly slice the onion and add it to the mixing bowl. If you prefer a milder taste, soak the shaved onion in cold water for 10 minutes before adding.

    Incorporate Mandarin Oranges

    Drain the mandarin oranges if using canned ones. Gently fold them into the bowl with the vegetables.

    Add Toasted Cashews

    Chop the toasted cashews roughly and add them to the salad mixture for a crunchy texture.

    Top with Crispy Lo Mein Noodles

    Just before serving, sprinkle the crispy lo mein noodles on top of the salad for added crunch.
