Wine Ingredients

Method

Winemaking Process

  1. 1

    Harvesting Grapes

Harvest the Cabernet Sauvignon grapes when they are fully ripe, ideally in the late summer to early fall during the morning hours to keep them cool.

  2. 2

    Crushing and Destemming

Remove the stems and crush the grapes to release the juice. This can be done using a grape crusher or manually.

  3. 3

    Adding Water

Add 10 gallons of water to the crushed grapes to help with fermentation, ensuring that the mixture is well combined.

  4. 4

    Adding Yeast Nutrient

Stir in 2 teaspoons of yeast nutrient to support the fermentation process and help the yeast thrive.

  5. 5

    Inoculating with Yeast

Add the packet of malolactic starter culture to the mixture, ensuring it is well distributed.

  6. 6

    Adding Potassium Metabisulfite

Add 1 teaspoon of potassium metabisulfite to the mixture to help prevent oxidation and spoilage.

  7. 7

    Fermentation

Allow the mixture to ferment for about 1-2 weeks, stirring daily to ensure even fermentation.

  8. 8

    Adding Oak Chips

After fermentation is complete, add 4 oz of medium toast oak chips to the wine to impart flavor and complexity.

  9. 9

    Aging

Transfer the wine to a secondary fermentation vessel for aging. Allow it to age for at least 6 months, tasting periodically for desired flavor.

  10. 10

    Bottling

Once aging is complete, filter the wine and bottle it. Seal the bottles with corks and store them in a cool, dark place.
