Cook the Filling
In a skillet over medium heat, cook the ground beef or shredded chicken until browned. Add chopped onion and minced garlic, and sauté for about 3-4 minutes until onion is translucent. Stir in taco seasoning and a splash of water, cooking for another 2-3 minutes until everything is well combined. Remove from heat and let cool slightly.

Assemble the Taquitos or Flautas
For taquitos, warm the corn tortillas in a dry skillet or microwave until pliable. Place about 2 tablespoons of the filling in the center of each tortilla and roll tightly. For flautas, do the same with the flour tortillas. Secure with a toothpick if necessary.

Fry the Taquitos or Flautas
In a large skillet, heat the oil over medium-high heat. Once the oil is hot, carefully add the rolled taquitos or flautas to the skillet, frying in batches if necessary. Fry for about 3-4 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
