Method

Enchiladas

  1. 1

    Prepare the Filling

In a large skillet, heat olive oil over medium heat. Add the diced onion, bell pepper, and zucchini. Sauté until they soften, about 5 minutes.

  2. 2

    Add Seafood

Add the minced garlic, shrimp, and crab meat to the skillet. Season with salt and black pepper. Cook until the shrimp turn pink and opaque, about 5-7 minutes.

  3. 3

    Mix in Cilantro

Stir in the chopped cilantro and remove the skillet from heat. Let the filling cool slightly.

  4. 4

    Assemble Enchiladas

Preheat your oven to 180°C (350°F). Take a corn tortilla, place a generous amount of the seafood filling in the center, roll it up, and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

Sauce

  1. 5

    Make the Sauce

In a medium saucepan, combine the tomato sauce, chili powder, cumin, lime juice, and salt. Bring to a simmer over medium heat and let cook for about 10 minutes to blend the flavors.

  2. 6

    Pour Sauce Over Enchiladas

Once the sauce is ready, pour it evenly over the rolled enchiladas in the baking dish.

Topping

  1. 7

    Add Cheese

Sprinkle the shredded cheese generously over the enchiladas.

  2. 8

    Bake

Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.

  3. 9

    Serve with Sour Cream

Remove from the oven and let cool for a few minutes. Serve the enchiladas hot, drizzled with sour cream.
