    Prepare the Filling

    In a mixing bowl, combine the shredded cooked chicken with salt to taste. Mix thoroughly and set aside.

    Warm the Tortillas

    In a skillet, heat the olive oil over medium heat. Once hot, lightly fry the corn tortillas, one at a time, for about 10-15 seconds on each side until flexible. Remove and place on a plate lined with paper towels to absorb excess oil.

    Assemble the Enchiladas

    Take a warm tortilla, add about 1/4 cup of the chicken filling in the center, and roll it up tightly. Place the rolled enchilada seam-side down in a baking dish. Repeat with the remaining tortillas and filling.

    Add Mole Sauce

    Pour the mole sauce evenly over the assembled enchiladas in the baking dish, ensuring they are well covered.

    Add Cheese

    Sprinkle the shredded cheese over the top of the enchiladas, making sure to cover them completely.

    Bake the Enchiladas

    Preheat the oven to 350°F (175°C). Place the baking dish in the oven and bake for 20-25 minutes, or until the cheese is melted and bubbly.

    Remove from the oven, let cool for a few minutes, and serve topped with sour cream and chopped fresh cilantro.
