Taquitos

Method

Taquitos

    Prepare the Filling

    In a bowl, mix the shredded cooked chicken and shredded cheese. Add salt to taste.

    Assemble the Taquitos

    Take a corn tortilla and place 2 tablespoons of the chicken mixture on one end. Roll tightly and secure with a toothpick.

    Fry the Taquitos

    In a deep skillet, heat the vegetable oil over medium-high heat. Fry the taquitos until golden brown and crispy, about 3-4 minutes on each side.

    Remove the taquitos from the oil and place on paper towels to drain excess oil.

Flutas

    In a bowl, combine the shredded beef and chopped cilantro.

    Assemble the Flutas

    Lay a flour tortilla flat, add 1/3 cup of the beef mixture, and roll tightly.

    In the same skillet, fry the flutas in the remaining oil until golden brown, about 3-4 minutes on each side.

    Serve hot with a side of sour cream for dipping.

Quesadilla

    Heat a skillet over medium heat. Place one flour tortilla in the skillet.

    Sprinkle half of the shredded cheese, bell peppers, and onions on one half of the tortilla.

    Fold the tortilla over and cook until the cheese is melted and the tortilla is golden brown, about 2-3 minutes on each side.

    Remove from heat, slice into wedges, and serve warm.

Jalapeno Poppers

    Cut the jalapenos in half lengthwise and remove the seeds.

Dressing
