Fish & Marinade

    Prepare fish

    Rinse the kingfish steaks under cold water and pat dry thoroughly with paper towels. Make 2 shallow diagonal slashes on each side of the steaks to help the marinade penetrate.

    In a shallow bowl, combine lemon juice, 1.5 tsp salt, turmeric powder, ginger paste, and garlic paste. Mix into a smooth marinade.

    Rub the marinade all over each steak, making sure it gets into the slashes and the sides. Cover and refrigerate for 20–30 minutes (up to 1 hour). Do not marinate much longer than 1 hour for fish, or texture may become mushy.

Dry Coating & Seasoning

    While the fish marinates, combine the dry coating: in a wide shallow dish mix rice flour, cornstarch, red chili powder, black pepper, garlic powder (if using), and cayenne (if using). Taste a tiny pinch and adjust salt if desired. Set aside.

    Pat the marinated fish lightly again to remove excess wet marinade so the dry coating adheres better.

Batter (optional light batter)

    If you want a light batter crust (optional), whisk together the all-purpose flour, cold water, egg (if using), and 1/4 tsp salt until just combined. Batter should be slightly runny — not thick. Keep chilled until ready.

    For a crisper, less bready fry, skip the batter and only use the dry coating. Both approaches are described below in the frying steps.

For Frying & Garnish

    Heat a heavy skillet or cast-iron pan over medium-high heat for 2–3 minutes. Add oil to come about 1/8–1/4 inch up the sides (about 3/4–1 cup depending on pan). Heat until shimmering but not smoking; a small pinch of coating dropped in should sizzle immediately.

    Coat the fish (dry method)

    Dredge each marinated steak in the dry coating mix, pressing gently so the flour mixture adheres well to both sides and into the slashes. Shake off excess.

    Coat the fish (batter method)

    If using batter, dip the marinated steak into the batter, allowing excess to drip back into the bowl, then optionally dredge lightly in the rice-flour mixture for extra texture.

    Place the steaks carefully into the hot oil. Do not overcrowd the pan; fry in batches if needed so each piece has room and the oil temperature stays steady.

    Fry each side 3–5 minutes depending on thickness (typically 3–4 minutes per side for 1-inch steaks). Cook until golden brown and a thin crust forms and the fish is opaque and flakes easily with a fork. Adjust time: thicker steaks may need 5–6 minutes per side on medium heat. Keep the oil temperature around medium to medium-high so the exterior crisps without burning and the interior cooks through.

    If pieces are browning too quickly, reduce heat slightly. If they are taking too long and absorbing oil, raise heat a little.

    When cooked, transfer to a wire rack or paper towels to drain briefly. Squeeze fresh lemon over the hot fish, and garnish with chopped cilantro. Serve with sliced onions and extra lemon wedges.

    Optional finishing: For extra flavor, in the last 30 seconds of frying, drizzle 1 tsp of hot oil over the fish and quickly baste with it to bring out aromas before removing from pan.
