    Prepare fish

    Pat fish fillets dry with paper towel. Cut into 6–8 serving pieces (about 8–10 cm each). Make 2 shallow diagonal slashes on each piece to help marinade penetrate.

    Mix turmeric powder, 1 tsp salt and lime juice in a bowl. Rub the mixture over fish pieces, into the slashes. Set aside to marinate for 15–20 minutes while you prepare the vathal and curry base.

Spiced Vathal (dry fish pickle) and Curry Base

    If using whole spices

    Dry-roast coriander seeds, fennel seeds, black peppercorns and dry red chillies in a small pan over medium heat for 1–2 minutes until fragrant. Remove and grind coarsely using a spice grinder or mortar and pestle. Set aside.

    Heat 3 tablespoons oil in a wide, heavy-bottomed pan over medium heat. Add mustard seeds. When they start to pop, add fenugreek seeds and curry leaves and sauté for 10–15 seconds. Be careful not to burn fenugreek.

    Add the vathal (dried preserved pieces) and shallow-fry for 2–3 minutes, stirring, until they puff slightly and become aromatic. If your vathal is very hard, reduce heat and fry a little longer so it softens and toasts slightly. Remove half of the fried vathal to a bowl (these can be used as crunchy garnish) and keep the rest in the pan.

    Add sliced onion to the pan and sauté on medium-low heat for 6–8 minutes until translucent and beginning to caramelize. Add minced garlic and ginger; sauté 1–2 minutes until raw smell disappears.

    Add chopped tomato and cook 4–5 minutes until softened and breaking down. Add the coarsely ground spice mix and stir for 30–45 seconds to bloom the spices in the oil.

    Pour in 200–250 ml water, add tamarind paste, remaining 1 tsp salt and jaggery if using. Bring to a gentle simmer and cook 3–4 minutes so flavors meld and you have a thin curry base. Taste and adjust seasoning — it should be tangy-spicy with a hint of sweetness.

Cooking Fish in Vathal Curry

    Gently slide marinated fish pieces into the simmering curry in a single layer. Spoon some curry base over the fish so pieces are partially submerged. Reduce heat to low-medium. Cover and simmer for 8–10 minutes, turning pieces once carefully after 4–5 minutes to coat both sides, until fish is cooked through and flakes easily with a fork. Cooking time depends on thickness; do not overcook.

    While fish cooks, in a small frying pan heat the remaining 1 tablespoon oil over medium heat. Quickly shallow-fry the reserved fried vathal pieces until crisp and slightly darker (30–60 seconds), then remove to a paper towel-lined plate.

    Once fish is cooked, gently transfer pieces to a serving dish and pour remaining curry over them. Scatter the crisped vathal pieces on top for texture. Finish with slit green chillies (if using) and chopped fresh coriander.

Serving

    Serve Vathal Fish hot with steamed rice, appam, dosa or rotis. Leftover curry keeps 1–2 days refrigerated; reheat gently to avoid breaking the fish.
