Rice & soaking

Rinse and soak
Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Soak the rinsed rice in cold water for 30 minutes, then drain.

Par-cook rice
Bring 8 cups water to a rolling boil in a large pot. Add 1 tsp salt, cardamom, cloves, cinnamon stick, and bay leaf. Add drained rice and boil uncovered on high heat until rice is 70% cooked (grains should still show a white core) — about 6–7 minutes depending on rice. Drain rice in a colander and set aside.

Marinate the meat
In a large bowl combine the chicken or lamb with yogurt, ginger paste, garlic paste, red chili powder, turmeric, garam masala, 1.5 tsp salt, and lemon juice. Mix thoroughly so the pieces are well coated. Cover and refrigerate for at least 1 hour, preferably 3–4 hours or overnight for best flavor.

Prepare saffron
Soak saffron threads in 3 tbs warm milk and set aside to release color and aroma.

Cook onions and spices
Heat 4 tbs ghee or oil in a heavy-bottomed pot or deep skillet over medium heat. Add cumin seeds and let them sizzle for 10–15 seconds. Add the thinly sliced onions and cook, stirring often, until soft and golden brown, about 12–15 minutes. Remove one-third of the onions and set aside for layering and garnish. Add chopped tomato (if using) and slit green chilies to the pot and cook 3–4 minutes until tomatoes soften. Stir in ground coriander and biryani masala and cook for another minute until fragrant.

Brown the marinated meat
Add the marinated meat to the pot with the onion-tomato mixture. Increase heat to medium-high and brown the meat pieces for 5–7 minutes, stirring occasionally. Cover and simmer on medium-low heat for 12–15 minutes (chicken) or 20–25 minutes (lamb) until the meat is about 80% cooked and most of the marinade has reduced. Stir in half of the chopped cilantro and mint.
Assembling & layering

Layer rice and meat
Preheat oven to 160°C (320°F) if you plan to finish in the oven. On top of the cooked meat in the pot, spread a layer of the par-cooked drained rice evenly. Sprinkle the reserved fried onions, remaining cilantro and mint, and the saffron-milk evenly over the rice. Dot the surface with 1 tbs butter and the remaining 2 tbs ghee melted. If desired, drizzle 1–2 tbs water or more lemon juice for extra aroma.

Dum (seal and steam)
Seal the pot: cover tightly with a lid; to seal further, place a layer of aluminum foil between lid and pot rim or wrap the lid with a damp kitchen towel to trap steam. Cook on very low heat on the stovetop (use a heat diffuser if available) for 25–30 minutes to allow flavors to meld and rice to finish cooking. Alternatively, transfer the sealed pot to the preheated oven and bake for 25–30 minutes.
Finishing & serving

After 25–30 minutes, turn off the heat and let the biryani rest, still sealed, for 10 minutes. Remove the lid, gently fluff the rice with a fork, taking care not to break grains, and mix lightly to distribute layers. Garnish with the reserved fried onions and a few extra mint leaves.
