    Make dough

    In a large mixing bowl, combine 2 cups all-purpose flour, 1/2 tsp salt and 1/4 tsp sugar. Mix well. Add 3 tablespoons oil and 1 tablespoon ghee or melted butter; rub into the flour with your fingertips until mixture looks like coarse crumbs. Gradually add about 1/2 cup cold water, a little at a time, and knead to form a firm, smooth dough (similar to chapati dough but slightly firmer). Knead 3–4 minutes. Cover with a damp cloth and rest for 30 minutes.

    Divide dough

    After resting, divide the dough into 8 equal portions (for medium samosas). Roll each portion into a smooth ball and keep covered to prevent drying.

Filling (Kerala-style spiced potato + peas)

    Prepare potatoes

    Boil or pressure-cook 3 medium potatoes until tender. Drain, allow to cool slightly, peel and mash coarsely. Measure about 3 cups mashed potato. If you prefer firmer texture, roughly chop instead of fully mashing.

    Temper spices

    Heat 2 tablespoons coconut oil in a skillet over medium heat. Add 1 teaspoon mustard seeds and when they begin to pop, add 1/2 teaspoon cumin seeds, 1 teaspoon urad dal and 1 teaspoon chana dal. Fry until the dals turn golden (about 1 minute). Add 8 curry leaves and 2 slit green chilies and sauté 15–20 seconds until aromatic.

    Sauté aromatics

    Add 3 finely chopped garlic cloves and 1 teaspoon grated ginger to the pan. Sauté 30–45 seconds until fragrant but not browned.

    Cook spices and peas

    Stir in 1/2 teaspoon turmeric powder, 1/2 teaspoon red chili powder and 1/2 teaspoon garam masala; cook 20–30 seconds to bloom the spices. Add 1/2 cup frozen peas (no need to thaw) and cook 2–3 minutes until they are tender.

    Combine with potatoes

    Add the mashed potatoes to the pan. Mix thoroughly to combine with the spiced mixture. Add 1/2 teaspoon salt (adjust to taste) and 1 tablespoon lime juice; mix. If using, stir in 1/2 teaspoon kokum or tamarind paste for a subtle tang. Cook the filling for 2–3 minutes to let flavors meld and excess moisture evaporate. Stir in 2 tablespoons chopped fresh coriander. Taste and adjust salt, spice or lime as needed. Remove from heat and let the filling cool to room temperature before stuffing.

Assembling

    Roll sheets

    Lightly flour a work surface. Take one dough ball and roll it into an oval about 6–7 inches long and 4–5 inches wide, about 1.5–2 mm thick. If the dough resists, let it rest 5 minutes and retry.

    Form cones

    Cut the rolled oval in half lengthwise to create two semi-circles. Take one semi-circle and form a cone by bringing the straight edge corners together, overlapping slightly; seal the edge with a little water. Press to create a pointed cone with an open top for filling. If desired, dust the inside lightly with 1 teaspoon cornstarch (this helps absorb moisture) before filling.

    Fill and seal

    Spoon about 2–3 tablespoons of the cooled potato-pea filling into each cone (do not overfill). Moisten the open edges with water and fold to seal the samosa: tuck the top edge down and press firmly ensuring no gaps remain. You can crimp the sealed edge with your fingers or use a fork for a decorative seal. Repeat with remaining dough and filling.

Frying

    Heat oil

    In a deep, heavy-bottomed pan or kadai, heat about 3 cups oil for deep-frying over medium heat. Oil temperature should be 170–180°C (340–355°F). If you don't have a thermometer, test by dropping a small piece of dough — it should sizzle and rise slowly to the surface without browning immediately.

    Fry samosas

    Carefully lower 2–3 samosas (do not overcrowd) into the hot oil. Fry on medium heat, turning occasionally, until the samosas are golden brown and crisp on all sides, about 6–8 minutes. Maintain steady medium heat so the outside browns evenly while the inside cooks through. Remove with a slotted spoon and drain on paper towels. Repeat with remaining samosas.

    Alternative: shallow fry / bake

    For a lighter version, shallow-fry in 2 tablespoons oil per batch, turning frequently until crisp, or brush with oil and bake at 200°C (400°F) for 20–25 minutes, turning halfway, until golden and crisp.

Serve

    Let samosas rest 2–3 minutes so they firm up, then serve hot with coconut chutney, mint-coriander chutney or tamarind-date chutney and a wedge of lime. Samosas are best eaten warm and crisp.
