    Prepare the Vegetables

    In a skillet, heat olive oil over medium heat. Add chopped onions and minced garlic, sauté until translucent. Add diced bell peppers and zucchini, season with salt, pepper, and oregano, and cook until softened.

    Sauté the Bread

    In a separate pan, lightly toast the bread slices until golden brown on both sides.

    Layer the Casserole

    In a greased baking dish, layer half of the sautéed bread at the bottom. Spread half of the yogurt and half of the tomato sauce over the bread. Add the cooked vegetables and gyro meat, then layer the remaining bread, yogurt, and tomato sauce on top.

    Add Cheese (Optional)

    If using, sprinkle cheese on top of the final layer.

    Bake the Casserole

    Preheat the oven to 350°F (175°C). Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until golden and bubbling.
