Preparation and Cooking
Marinate the Lamb
In a large bowl, combine olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper. Add the cubed baby lamb to the marinade and mix well to coat. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for best results.
Prepare Skewers
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning. Preheat the grill to medium-high heat.
Skewer the Lamb
Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece for even cooking.
Grill the Kebabs
Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired doneness.
Serve
Remove the kebabs from the grill and let them rest for a few minutes. Serve warm with your choice of sides, such as rice, pita, or a fresh salad.
