Prepare the Rice
Rinse the rice under cold water until the water runs clear. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and a pinch of salt, then reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and the water is absorbed.

Thicken the Mixture
In a small bowl, mix the cornstarch with a few tablespoons of cold milk to create a slurry. Gradually stir this into the simmering rice mixture. Continue to cook, stirring constantly, until the pudding thickens (about 5–7 minutes).

Add Flavor and Bake
Remove the saucepan from heat and stir in the vanilla extract. Pour the mixture into a greased baking dish. Preheat the oven to 350°F (175°C) and bake for 30–35 minutes or until the top is golden brown.

Serve
Allow the Sutlac to cool slightly before serving. Garnish with a sprinkle of cinnamon and chopped almonds if desired.
