Make the Dough
In a large bowl, combine all-purpose flour and salt. Gradually add water, mixing until a soft dough forms. Knead on a floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Cream Filling
In a saucepan, heat milk over medium heat. Gradually whisk in sugar and cornstarch until the mixture is smooth. Continue to cook, stirring constantly, until thickened. Remove from heat and stir in vanilla extract. Let it cool.

Assemble the Sobiyet
Stack the rolled-out dough layers, brushing melted butter between each layer. Cut the layered dough into squares. Place a spoonful of the cream filling and a teaspoon of chopped pistachios in the center of each square. Fold the corners over the filling to form a triangle.

Bake the Sobiyet
Preheat your oven to 375°F (190°C). Arrange the filled triangles on a baking sheet lined with parchment paper. Brush the tops with more melted butter. Bake for 25-30 minutes or until golden brown.

Serve
Once baked, let the Sobiyet cool slightly. Dust with powdered sugar before serving.
