Prepare the Okra
In a large skillet, heat olive oil over medium heat. Add the chopped onions, minced garlic, and bell pepper. Sauté for about 5 minutes until the onions are translucent.

Add Tomatoes and Okra
Stir in the diced tomatoes, sliced okra, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.

Combine with Broth
Pour in the vegetable broth and bring the mixture to a simmer. Reduce the heat to low and cover the skillet. Let it cook for about 20-25 minutes, stirring occasionally, until the okra is tender.

Prepare the Rice
While the okra is cooking, prepare the rice according to the package instructions.

Once the okra casserole is ready, serve it hot over a bed of rice.
