Prepare the Meat Mixture
In a large mixing bowl, combine the ground beef, ground lamb, chopped onion, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix until well combined.

Shape the Mixture
Shape the meat mixture into a loaf and wrap tightly in plastic wrap. Refrigerate for at least 1 hour to firm up.

Cook the Meat
Preheat the oven to 180°C (350°F). Remove the meat from the fridge and unwrap. Place it on a baking sheet and drizzle with olive oil. Bake for 30-35 minutes, or until cooked through and slightly crispy on the outside.

Slice the Meat
Once cooked, remove the meat from the oven and let it rest for 10 minutes. Using a sharp knife, slice the meat thinly.

Assemble the Gyro Doner
Warm the pita bread briefly in the oven or on a skillet. Fill each pita with sliced gyro meat, topped with tzatziki sauce, sliced tomatoes, and red onions.

Serve immediately, garnished with extra parsley if desired.
