    If using dried white kidney beans, soak them overnight in water. Drain and rinse before using. If using canned beans, simply rinse and drain.

    In a large pot, heat olive oil over medium heat. Add the minced garlic and chopped scallions, sautéing until fragrant, about 2-3 minutes.

    Add Tomatoes

    Stir in the diced fresh tomatoes, salt, and black pepper. Cook for an additional 5 minutes, allowing the tomatoes to soften.

    Combine Beans and Liquid

    Add the soaked or canned white kidney beans to the pot along with the water or vegetable broth. Bring to a boil.

    Reduce the heat to low, cover the pot, and let it simmer for about 30-40 minutes, or until the beans are tender and the flavors meld together.
