    Soak the Chickpeas

    Rinse the dried chickpeas and soak them in water overnight or for at least 8 hours. Drain and rinse again.

    Prepare the Mixture

    In a food processor, combine the soaked chickpeas, chopped onion, minced garlic, parsley, cilantro, cumin, coriander, salt, and black pepper. Pulse until the mixture is coarse but holds together when formed into a ball.

    Add Baking Powder and Flour

    Transfer the mixture to a bowl, then add baking powder and all-purpose flour. Mix until well combined.

    Form the Falafel Balls

    Using your hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Falafel

    Carefully drop the falafel balls into the hot oil in batches, frying for about 3-4 minutes until golden brown. Remove and drain on paper towels.

    Serve hot with tahini sauce, pita bread, and fresh vegetables.
