Preparation

  1. 1

    Prepare the Yu Choy

Rinse the yu choy under cold water to remove any dirt or grit. Trim off any tough ends and cut the stems into 2-inch pieces, keeping the leaves whole.

  2. 2

    Mince the Garlic

Peel and finely mince the garlic cloves. Set aside.

  3. 3

    Slice the Chili Pepper

Remove the seeds from the red chili pepper (if desired for less heat) and slice it thinly. Set aside.

Cooking

  1. 4

    Heat the Wok

Place a wok over high heat and add the vegetable oil. Allow it to heat up until it shimmers.

  2. 5

    Stir-Fry the Garlic and Chili

Add the minced garlic and sliced chili pepper to the hot oil. Stir-fry for about 30 seconds or until fragrant, being careful not to burn the garlic.

  3. 6

    Add the Yu Choy

Quickly add the prepared yu choy to the wok. Stir-fry for 2-3 minutes, or until the leaves are wilted and bright green, and the stems are tender-crisp.

  4. 7

    Season the Dish

Pour the soy sauce, sesame oil, salt, and black pepper over the yu choy. Toss everything together to combine and cook for an additional minute.

  5. 8

    Serve

Remove the wok from heat and transfer the stir-fried yu choy to a serving platter. Serve immediately as a side dish.
