Rinse the yu choy under cold water to remove any dirt or grit. Trim off any tough ends and cut the stems into 2-inch pieces, keeping the leaves whole.

Peel and finely mince the garlic cloves. Set aside.

Remove the seeds from the red chili pepper (if desired for less heat) and slice it thinly. Set aside.
