Method

Preparing the Brisket Burnt-Ends

1

Cook the Brisket

Preheat your smoker or oven to 225°F (107°C). Season the brisket generously with brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and liquid smoke. Place the brisket in the smoker or oven and cook for 6-8 hours, or until it's tender and easily shreds.

2

Cut into Cubes

Once the brisket is cooked, remove it from the heat and let it rest for 30 minutes. Then, cut the brisket into 1-inch cubes.

3

Coat with BBQ Sauce

Toss the brisket cubes in BBQ sauce and return them to the smoker or oven for an additional 1-2 hours until the edges are caramelized and sticky.

Making the White Curry Sauce

4

Combine Ingredients

In a large saucepan over medium heat, combine coconut milk, chicken broth, curry powder, minced ginger, minced garlic, and salt. Stir well to mix all the ingredients.

5

Simmer

Bring the mixture to a gentle simmer. Allow it to cook for about 15-20 minutes, stirring occasionally, until it thickens slightly.

6

Finish with Lime and Cilantro

Remove the saucepan from heat and stir in lime juice and chopped cilantro. Adjust seasoning if needed.

Combining and Serving

7

Serve the Dish

In a serving bowl, place a generous scoop of cooked rice, top with the white curry sauce, and finish with the brisket burnt-ends. Garnish with lime wedges.
