    Prep the Vegetables

    Wash and chop the broccoli into bite-sized florets. Rinse the snow peas and remove the ends. Slice the bok choy into strips, separating the leaves from the stalks. Rinse baby spinach and set aside.

    Mince the garlic and ginger. Chop the green onions, keeping the white and green parts separate.

    Heat the Oil

    In a large wok or skillet, heat the vegetable oil over medium-high heat until shimmering.

    Stir-fry Aromatics

    Add the minced garlic, ginger, and the white parts of the green onions to the hot oil. Stir-fry for about 30 seconds until fragrant.

    Add the broccoli and bok choy stalks first. Stir-fry for 2-3 minutes until they start to soften.
