Preparing the Burger Patty

    Cooking Quinoa

    Rinse 1 cup of quinoa under cold water. In a saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until all the water is absorbed. Remove from heat and let it sit for 5 minutes. Fluff with a fork and set aside.

    Mashing Black Beans

    In a large bowl, mash the 1 cup of canned black beans using a fork or potato masher, leaving some chunks for texture.

    Combining Ingredients

    Add the cooked quinoa, finely chopped onion, minced garlic, grated carrot, chopped bell pepper, ground cumin, salt, black pepper, breadcrumbs, and egg (or flax egg) to the mashed black beans. Mix until well combined.

    Forming Patties

    Divide the mixture into two equal portions and shape each portion into a patty, about 1/2 inch thick.

    Cooking Patties

    Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook each patty for about 5-7 minutes on each side, or until golden brown and heated through.

    Preparing the Buns

    Toast the whole grain burger buns lightly on a skillet or in a toaster.

    Layering the Ingredients

    Place a lettuce leaf on the bottom half of each bun. Add a veggie patty on top of the lettuce.

    Layer sliced tomato, avocado, and cheese (if using) on top of the patty. Add ketchup and mustard to taste.

    Top with the other half of the bun, press down gently, and your veggie burger is ready to serve!
