Sauté the Vegetables
In a large skillet, heat olive oil over medium heat. Add garlic (minced) and sauté until fragrant, about 1 minute. Add chopped vegetables, and season with salt, pepper, and Italian seasoning. Cook for about 5-7 minutes until softened. Remove from heat.
Assembling Lasagna

Preheat the Oven
Preheat your oven to 375°F (190°C).

Layer the Ingredients
In a baking dish, spread a thin layer of marinara sauce on the bottom. Place 3 lasagna noodles over the sauce. Spread half of the ricotta cheese over the noodles, followed by half of the sautéed vegetables, a third of the mozzarella cheese, and a layer of marinara sauce. Repeat the layers, ending with a final layer of noodles topped with marinara sauce and the remaining mozzarella and Parmesan cheese.

Cover and Bake
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Uncover and Finish Baking
After 25 minutes, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.

Remove from the oven and let it rest for 10 minutes before slicing and serving.
