Method
Preparing Sushi Rice

Rinse the Rice
In a fine mesh strainer, rinse the sushi rice under cold water until the water runs clear. This removes excess starch.

Cook the Rice
In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

Season the Rice
In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

Spicy Tuna Preparation
In a bowl, combine the sushi-grade tuna (diced), mayonnaise, sriracha, chopped green onions, and sesame oil. Mix well and set aside.

California Filling Preparation
In another bowl, mix the imitation crab meat and mayonnaise. Slice the avocado and cucumber into thin strips.
Assembling the Sushi Rolls

Prepare Your Workspace
Lay out a bamboo sushi mat on a flat surface and place a sheet of nori on top, shiny side down.

Add the Rice
Wet your hands with water to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

Add the Filling
Place your desired filling (Spicy Tuna or California) in a line across the middle of the rice-covered nori.

Roll the Sushi
Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Wet the edge of the nori with water to seal the roll.

Slice the Roll
Using a sharp knife, slice the roll into 6-8 equal pieces. Wipe the knife with a damp cloth between cuts for clean slices.
Serving

Serve the Sushi
Arrange the sliced sushi rolls on a plate. Serve with soy sauce, pickled ginger, and wasabi on the side.
