Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare Spinach Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes. Remove from heat and let it cool slightly.

Mix Filling Ingredients
In a mixing bowl, combine the cooked spinach, cream cheese, shredded mozzarella cheese, dried oregano, dried thyme, and chopped parsley. Season with salt and black pepper. Mix until well combined.

Prepare Chicken Breasts
Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through.

Stuff Chicken Breasts
Stuff each chicken breast with the spinach and cheese mixture, using toothpicks to secure the opening if necessary.

Sear Chicken
In the same skillet used for the spinach, add the remaining tablespoon of olive oil. Heat over medium-high heat. Sear each stuffed chicken breast for about 4-5 minutes on each side until golden brown.

Bake Chicken
Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
