Prepare the Ribs
Rinse the baby back ribs under cold water and pat dry with paper towels. Remove the membrane from the back of the ribs for better flavor absorption.

Apply Mustard
Spread a thin layer of yellow mustard over both sides of the ribs. This will help the dry rub adhere.

Mix the Dry Rub
In a bowl, combine the brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix well until all ingredients are evenly distributed.

Generously apply the dry rub over the mustard-covered ribs, ensuring an even coat on both sides. Wrap the ribs in plastic wrap and refrigerate for at least 2 hours, preferably overnight.
Smoking

Prepare the Smoker
Soak the hickory wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C).

Smoke the Ribs
Remove the ribs from the refrigerator and place them in the smoker. Add the soaked hickory wood chips to the smoker box. Smoke the ribs for approximately 4 hours, or until the internal temperature reaches 190°F (88°C) and the meat is tender.
