Prep the Ingredients
Peel and devein the jumbo shrimp. Chop the bell pepper and onion into small dice. Slice the scallions, keeping the white and green parts separate. Beat the eggs in a small bowl and set aside.

Cook the Rice
If you haven't done so already, cook the rice according to package instructions. Allow it to cool completely; day-old rice is best for fried rice.

Heat the Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

Combine Ingredients
Add the cooked rice to the skillet along with the cooked shrimp and the white parts of the scallions. Stir everything together.

Season the Rice
Pour the soy sauce over the rice mixture. Add salt and black pepper to taste. Stir-fry everything together for another 3-4 minutes, allowing the rice to heat through.

Finish and Serve
Remove the skillet from heat and garnish with the green parts of the scallions. Serve hot.
