Prepare the scallops
Rinse the scallops under cold water and pat them dry with paper towels. Slice each scallop into thin rounds (about 1/4 inch thick).

Prepare the citrus dressing
In a small bowl, combine lime juice and orange juice. Whisk together until well mixed.

Prepare the jalapeño
Remove the seeds from the jalapeño (if less heat is desired) and finely chop it. Adjust the amount to taste.

Prepare the mint
Rinse the mint leaves and pat dry. Tear the leaves into smaller pieces, releasing their aroma.
Assembly

Arrange the scallops
On a chilled plate, arrange the sliced scallops in a circular pattern or in a single layer.

Add the citrus dressing
Drizzle the lime and orange juice mixture evenly over the arranged scallops.

Garnish
Sprinkle the finely chopped jalapeño over the scallops, followed by the torn mint leaves.

Season and serve
Sprinkle salt over the dish to taste. Serve immediately while fresh.
