Roasted Chicken

    Prepare the Chicken

    Preheat your oven to 375°F (190°C). Rinse the whole chicken under cold water and pat it dry with paper towels.

    Season the Chicken

    Rub the chicken with 2 tablespoons of olive oil, salt, and black pepper. Place the garlic cloves and rosemary inside the cavity of the chicken. Squeeze the lemon over the chicken and place the lemon halves inside the cavity as well.

    Roast the Chicken

    Place the chicken breast-side up in a roasting pan. Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C). Baste the chicken with its juices halfway through cooking.

    Prepare the Vegetables

    While the chicken is roasting, clean and cut the carrots, zucchini, and bell pepper into bite-sized pieces.

    Roast the Vegetables

    In a bowl, toss the chopped vegetables with 1 tablespoon of olive oil, salt, and black pepper. Spread them evenly on a baking sheet and roast in the oven for the last 30 minutes of the chicken's cooking time.

Mashed Potatoes

    Prepare the Potatoes

    Peel the potatoes and cut them into quarters. Place them in a large pot and cover with cold water.

    Cook the Potatoes

    Bring the pot of water to a boil over medium-high heat. Once boiling, reduce to a simmer and cook for about 15-20 minutes, or until the potatoes are fork-tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the butter, milk, salt, and black pepper. Mash until smooth and creamy. Adjust seasoning to taste.
