Pork Steak

    Prepare the Pork Steak

    Season the smoked coppa steaks with olive oil, salt, and black pepper.

    Cook the Pork Steak

    Heat a grill or skillet over medium-high heat. Cook the seasoned pork steaks for about 4-5 minutes on each side or until the internal temperature reaches 145°F (63°C). Remove from heat and let rest for 5 minutes before slicing.

Apple Som Tam

    Prepare the Som Tam

    Julienne the green apples and place them in a bowl. Halve the cherry tomatoes and add them to the bowl.

    Make the Dressing

    In a small bowl, whisk together lime juice, fish sauce, and palm sugar until the sugar dissolves. Add the Thai bird chilies for heat.

    Combine

    Pour the dressing over the apple and tomato mixture. Toss well and sprinkle with crushed peanuts before serving.

Nam Prik Num

    Prepare the Nam Prik Num

    Roast the tomatoes, green onions, Thai bird chilies, and garlic cloves in a dry skillet over medium heat until charred and fragrant.

    Blend

    Transfer the roasted ingredients to a blender. Add fish sauce and blend until smooth. Adjust seasoning if necessary.

Serving

    Plate the Dish

    Serve the sliced pork steak on a plate with a side of apple som tam and a small bowl of nam prik num. Garnish with leaves of little gem lettuce.
