Prepare the Sherbet Base

    Combine the Fruit Juices

    In a mixing bowl, combine the passionfruit pulp, blood orange juice, and guava puree. Mix well until fully combined.

    Add Sugar and Lemon Juice

    In the same bowl, add the granulated sugar and lemon juice to the fruit mixture. Stir until the sugar is completely dissolved.

    Mix in Water

    Gradually add the water to the mixture, stirring continuously to ensure an even consistency.

Freeze the Sherbet

    Transfer to Freezer Container

    Pour the sherbet mixture into a freezer-safe container, leaving some space at the top for expansion.

    Initial Freeze

    Cover the container with a lid or plastic wrap. Place it in the freezer for about 2 hours or until the edges begin to freeze.

    Stir and Freeze Again

    After 2 hours, remove the container from the freezer and stir the mixture vigorously with a fork to break up any ice crystals. Return it to the freezer for another 2-3 hours until fully frozen.

Prepare the Add-ins

    Prepare Shishito Peppers

    While the sherbet is freezing, wash and dry the shishito peppers. Heat a skillet over medium heat and lightly char them for about 5-7 minutes until blistered. Set aside to cool.

    Combine Add-ins

    In a small bowl, mix the charred shishito peppers, chili jam, and fried shallots together until well combined.

Serve

    Scoop and Serve

    Once the sherbet is fully frozen, scoop it into bowls and top with the shishito pepper mixture. Serve immediately and enjoy!
