Soak the rice noodles in warm water for about 30 minutes, or until they become soft. Drain and set aside.

In a small bowl, mix together the fish sauce, tamarind paste, sugar, soy sauce, and lime juice to create the sauce. Set aside.
Cooking

Sauté Shrimp
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes until they turn pink. Remove shrimp from the skillet and set aside.

Scramble Eggs
In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble them until just set, about 1-2 minutes. Remove from the skillet and set aside.

Stir-Fry Vegetables and Noodles
Add the remaining tablespoon of oil to the skillet. Add the minced garlic and chopped green onions, and stir-fry for about 30 seconds until fragrant. Add the soaked rice noodles and the prepared sauce, tossing well to combine.

Combine Ingredients
Add the cooked shrimp, scrambled eggs, and bean sprouts to the skillet. Toss everything together and cook for an additional 2-3 minutes until everything is heated through.
Serving

Serve the Pad Thai hot, garnished with chopped peanuts and lime wedges on the side.
