Preparation of Ingredients

    Prep the Vegetables

    Preheat the oven to 200°C (390°F). Peel and chop the potatoes into cubes. Slice the onions and shallots thinly.

    Roast the Potatoes

    Place the chopped potatoes on a baking tray, drizzle with olive oil, and season with salt. Roast in the oven for 30-35 minutes or until golden brown and cooked through.

    Fry the Shallots

    In a frying pan over medium heat, add a little oil and sauté the sliced shallots until they are golden and crispy. Remove from heat and set aside.

Making the Massaman Curry

    Cook the Curry Paste

    In a large pot, heat a tablespoon of oil over medium heat. Add the Massaman curry paste and fry for 1-2 minutes until fragrant.

    Sear the Lamb

    Add the smoked lamb shoulder to the pot, searing it on all sides for about 5 minutes.

    Combine Ingredients

    Pour in the coconut cream, followed by the fish sauce and brown sugar. Stir well to combine.

    Simmer the Curry

    Add the sliced onions and bring the mixture to a simmer. Cover and let it cook for about 1.5-2 hours, until the lamb is tender.

    Finish the Curry

    Once the lamb is cooked, taste and adjust seasoning with salt if needed. Stir in the crushed peanuts for added texture.

Serving

    Plate the Dish

    Serve the Massaman curry over a bed of roasted potatoes, garnished with crispy shallots and fresh cilantro.
