Method

Preparation

  1. 1

    Prepare the Marinade

In a small bowl, combine 2 tablespoons of fresh rosemary (finely chopped), 4 minced garlic cloves, 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well until fully blended.

  2. 2

    Marinate the Lamb Chops

Place the lamb chops in a shallow dish or a resealable plastic bag. Pour the marinade over the lamb chops, ensuring they are well coated. Cover the dish or seal the bag, and refrigerate for at least 1 hour, preferably overnight for maximum flavor.

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to high heat (about 400-450°F or 200-230°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

  2. 4

    Grill the Lamb Chops

Remove the lamb chops from the marinade and let them sit at room temperature for about 15 minutes. Place the chops on the grill and cook for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Use a meat thermometer to check for an internal temperature of 135°F (57°C) for medium-rare.

  3. 5

    Rest the Lamb Chops

Once cooked to your liking, remove the lamb chops from the grill and let them rest for 5 minutes. This allows the juices to redistribute, ensuring a tender and juicy final product.
