    Prepare the Prickly Pears

    Wear gloves and carefully peel the prickly pears, removing any thorns. Cut them in half and scoop out the pulp into a large pot.

    Combine Ingredients

    Add the 4 cups of water, 1 cup of sugar, and the cinnamon stick to the pot with the prickly pear pulp. Stir well to combine.

    Simmer

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.

    Strain the Mixture

    After simmering, remove from heat and let it cool slightly. Strain the mixture through a fine mesh sieve or cheesecloth into a large bowl, discarding the solids. Stir in the lemon juice.

Flavoring the Cider

    Add Mint and Ginger

    Finely chop the fresh mint leaves and ginger root. Add them to the strained cider base and stir well.

    Cover the cider and refrigerate for at least 2 hours to allow the flavors to meld.

    When ready to serve, pour the cider into glasses filled with ice and top each glass with sparkling water. Garnish with additional mint leaves if desired.
