Battered Fish

    Prepare the Batter

    In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the cold sparkling water, mixing until you have a smooth batter.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, making sure it's evenly coated.

    Fry the Fish

    Carefully place the battered fish fillets into the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thick strips to make fries.

    Soak the Fries

    Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a separate pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Fries

    Drain the soaked potatoes and pat them dry with a towel. Fry the fries in batches for about 5-7 minutes, or until golden brown and crispy. Remove and drain on paper towels. Season with salt.

Tartar Sauce

    Mix the Sauce

    In a small bowl, combine mayonnaise, dill pickles, capers, lemon juice, and Dijon mustard. Stir until well mixed. Season with salt and black pepper to taste.
