Method

Braised Short Ribs

    Sear the Short Ribs

    In a large Dutch oven or heavy pot, heat 2 tablespoons of olive oil over medium-high heat. Season the short ribs with salt and black pepper. Sear the ribs on all sides until browned, about 3-4 minutes per side. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add the chopped onion, carrots, celery, and minced garlic. Sauté for about 5 minutes until the vegetables are softened.

    Deglaze the Pot

    Pour in the red wine and scrape the bottom of the pot to release any browned bits. Let it simmer for about 3-4 minutes.

    Add Broth and Seasonings

    Return the short ribs to the pot. Add the beef broth, bay leaves, and fresh thyme. Bring the mixture to a simmer.

    Braise the Ribs

    Cover the pot and reduce the heat to low. Let the ribs braise gently for about 2.5 to 3 hours, or until the meat is tender and falls off the bone.

Mashed Potatoes

    Boil the Potatoes

    While the ribs are braising, place peeled and cubed potatoes in a large pot. Cover with cold water and add 1 teaspoon of salt. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Seasonal Vegetables

    Prepare the Vegetables

    In a separate skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasonal vegetables. Sauté for about 5-7 minutes until tender-crisp. Season with salt and black pepper to taste.
