Preparing the Broth

Roast the Bones
Preheat your oven to 200°C (400°F). Spread the beef bones on a baking sheet and roast for about 30-40 minutes until browned. This enhances the flavor of the broth.

Season the Broth
After simmering, strain the broth through a fine mesh sieve into another pot. Discard the solids. Add fish sauce, sugar, and salt to taste. Keep the broth warm.
Preparing Noodles and Beef

Cook the Noodles
Soak the rice noodles in hot water for about 30 minutes until soft. Drain and set aside.

Prepare the Beef
Thinly slice the beef sirloin or brisket against the grain. If desired, freeze the beef for about 30 minutes to make slicing easier.
Assembly

Assemble the Bowls
In a serving bowl, place a portion of the soaked rice noodles. Top with raw beef slices (the hot broth will cook the beef). Pour the hot broth over the noodles and beef.

Garnish and Serve
Garnish with fresh basil, bean sprouts, lime wedges, sliced jalapeños, and chopped green onions. Serve immediately and enjoy your homemade Beef Pho!
