Whisk base
In a medium mixing bowl, add 1.5 cups plain Greek yogurt and 2 tablespoons vanilla protein powder. Whisk vigorously until the powder is fully incorporated and the mixture is smooth and slightly aerated (about 30–45 seconds).

Add 1 tablespoon maple syrup, 1 tablespoon fresh lemon juice, 1/2 teaspoon finely grated lemon zest, 1/2 teaspoon vanilla extract, 1/4 teaspoon ground cinnamon, and a pinch of sea salt to the yogurt mixture. Fold gently until homogenous, scraping the bowl so no streaks remain. Taste and adjust sweetness with an additional 1/2 teaspoon maple syrup if desired.

If you prefer a thinner consistency, whisk in 1–2 tablespoons cold water or milk of choice until you reach a spoonable but pourable texture. Chill the base in the refrigerator while you prepare toppings (5–10 minutes recommended).

Core and dice 1 apple into 1/4-inch pieces. Roughly chop 1/4 cup walnuts. Measure 3/4 cup granola and, if using, set aside 1 teaspoon chia seeds and a pinch of flaky sea salt.

Spoon the chilled Yowza base into two serving bowls (approximately 3/4 cup base per bowl). Smooth the tops with the back of a spoon or leave slightly swirled for texture.

Scatter the diced apples evenly atop the granola (about 1/2 the apple per bowl) so you get juicy bites through each spoonful.

Sprinkle the chopped walnuts over the apples and granola (about 2 tablespoons walnuts per bowl). If using chia seeds, sprinkle 1/2 teaspoon chia seeds per bowl now.

Drizzle 1 teaspoon honey over each bowl in a thin zigzag to coat the fruit and granola—this adds shine and gentle sweetness. Finish with a light dusting of ground cinnamon (a pinch, roughly 1/8–1/4 teaspoon divided between the bowls) and an optional pinch of flaky sea salt to enhance flavor contrast.

Serve immediately so the granola stays crisp. If preparing ahead, keep granola and walnuts separate and add just before serving to maintain crunch.
