Combine coffee and water
In a large jar or pitcher, add 1 cup coarsely ground coffee. Pour 4 cups cold filtered water over the grounds, stirring gently to make sure all grounds are saturated. Cover the container.

Steep
Let the coffee steep at room temperature or refrigerated for 12–18 hours. Longer steeping yields a stronger concentrate; 12 hours is balanced, 18 hours is more intense.

Strain
After steeping, strain the coffee through a fine mesh sieve lined with a coffee filter, cheesecloth, or a Toddy system into a clean container. Press or squeeze gently to extract concentrate but avoid forcing too much sediment. The resulting liquid is cold brew concentrate.

Dilution (optional)
If you prefer a ready-to-drink strength, dilute the concentrate 1:1 with cold water. For this latte recipe, use the concentrate as-is (undiluted) so the coffee remains bold when mixed with milk and ice.
Optional — Cinnamon Syrup

Make syrup
In a small saucepan combine 1 cup water, 1 cup granulated sugar, and 2 cinnamon sticks. Bring to a simmer over medium heat, stirring until sugar dissolves. Lower heat and simmer gently for 5 minutes to infuse cinnamon flavor.

Prepare glass
Fill a tall serving glass with 1 cup of ice cubes.

Add coffee and sweetener
Pour 1 cup Toddy cold brew concentrate into the glass over the ice. Add 1 tablespoon cinnamon syrup (or 1/2–1 tablespoon honey) to taste. Stir gently to combine and dissolve sweetener.

Add almond milk
Slowly pour 1 cup unsweetened almond milk over the coffee so it creates a layered look. Taste and adjust sweetness: add another 1/2 tablespoon cinnamon syrup or sweetener if desired.

Finish and garnish
Sprinkle about 1 teaspoon ground cinnamon over the top. Optionally stir once more before drinking. Serve immediately with a straw or spoon for mixing.
