Flavor B — Lemon Blueberry (1 bite)
Flavor C — Peanut Butter & Jelly (1 bite)
Flavor D — Matcha Coconut (1 bite)
Method
Base (makes approx. 4 energy bites)

Combine dry ingredients
In a medium mixing bowl, combine 0.75 cups rolled oats and 1 tablespoon ground flaxseed. Stir to distribute evenly.

Mix wet ingredients
In a separate small bowl or measuring cup, whisk together 0.25 cups almond butter, 2 tablespoons honey (or maple syrup), 0.5 teaspoon vanilla extract and 1/8 teaspoon fine sea salt until smooth and pourable. If the almond butter is very stiff, microwave 8–12 seconds to loosen.

Combine base
Pour the wet mixture into the bowl with the oats and flax. Stir vigorously until a cohesive, slightly sticky dough forms. If mixture is too dry, add up to 1 teaspoon of warm water or extra honey; if too wet, add 1 tablespoon oats. The total base should be enough for four roughly 1.5–2 inch bites with add-ins.
Flavor A — Chocolate Chip & Cacao (1 bite)

Add chocolate
Take roughly one quarter (about 1/4) of the base mixture (about 3 tablespoons) into a small bowl. Add 1 tablespoon mini chocolate chips and 1/2 teaspoon unsweetened cocoa powder. Stir until evenly distributed. Taste and adjust: add a few extra chips if you prefer more chocolate.

Form
Using clean hands or a small scoop, press and roll the mixture into a compact ball about 1.5–2 inches diameter. Place on a parchment-lined tray.
Flavor B — Lemon Blueberry (1 bite)

Add lemon and berries
Take another quarter of the base (≈3 tablespoons). Fold in 1 tablespoon dried blueberries and 1/2 tablespoon fresh lemon zest. If dried blueberries are very hard, briefly chop them so they distribute more evenly.

Form
Press and roll into a tight ball and place next to the chocolate bite on the tray.
Flavor C — Peanut Butter & Jelly (1 bite)

Add PB&J components
Take a third quarter of the base (≈3 tablespoons). Add 1/2 tablespoon extra peanut butter and mix to marble — you want visible streaks of peanut butter, not complete homogenization. Fold in nothing else so the jam will be added after forming.

Form and fill
Press half the mixture into a small palm-sized disk, add 1/2 tablespoon jam in the center, then top with the remaining half of the mixture and press to seal. Roll gently into a ball. Wipe any sticky jam from the outside with a damp fingertip.
Flavor D — Matcha Coconut (1 bite)

Add matcha and coconut
Take the final quarter of the base (≈3 tablespoons). Sprinkle in 1/2 teaspoon matcha powder and 1 tablespoon shredded coconut. Mix until the matcha is fully incorporated and the coconut is evenly distributed.

Form and finish
Roll into a ball. Optionally, roll the outside in a pinch of extra shredded coconut for a finished look and texture.
Chill & Serve

Place all four energy bites on the parchment-lined tray and refrigerate for at least 20–30 minutes to firm up (longer if you prefer a firmer texture). For immediate eating, they can be enjoyed right away but will be slightly softer.

Store finished energy bites in an airtight container in the refrigerator for up to 7 days or freeze up to 3 months. Thaw in the fridge for 30–60 minutes before eating if frozen.
