Prep dates
Using a small paring knife, make a lengthwise slit in each Medjool date and remove the pit. Keep the dates whole except for the slit so they can be stuffed and closed back up.

Make filling
In a small bowl, combine 3 tablespoons soft goat cheese with the toasted chopped pecans. Stir until evenly mixed. If using cream cheese, ensure it is softened to blend smoothly.

Stuff dates
Spoon about 1/2 tablespoon of the cheese-pecan mixture into each pitted date, pressing gently so the mixture fills the cavity without overstuffing. Close the dates by pressing the slit edges together lightly.

Melt chocolate
Place the chopped dark chocolate and 1 teaspoon unsalted butter in a small heatproof bowl. Melt using a double boiler over gently simmering water, stirring until smooth and glossy (alternatively microwave in 15-second bursts, stirring between bursts until melted). Keep warm and smooth for dipping.

Dip dates
Line a tray with parchment paper. Holding each stuffed date by one end, dip roughly half of the date into the melted chocolate so it has a tuxedo-like appearance (chocolate on one side and open cheese side showing on the other). Allow excess chocolate to drip back into the bowl, then place the date on the parchment.

Finish & season
Immediately sprinkle a tiny pinch of flaky sea salt onto the chocolate portion of each date. If using optional garnishes, sprinkle chopped pistachios on one date and a little orange zest on the other while chocolate is still wet. Drizzle 1 teaspoon honey over one of the two dates if you want extra sweetness.

Set and serve
Allow the chocolate to set at room temperature for 20–30 minutes or refrigerate for 8–10 minutes until firm. Serve at room temperature for best texture. Store any leftovers in an airtight container in the refrigerator for up to 3 days; bring to room temperature before serving.
