Steak Preparation

    Season the Steak

    Generously season both sides of the ribeye steaks with kosher salt and black pepper.

    Preheat the Pan

    Heat olive oil in a large cast-iron skillet over medium-high heat until shimmering.

    Cook the Steak

    Add the seasoned ribeye steaks to the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Rest the Steak

    Remove the steaks from the skillet and let them rest on a plate for 5-10 minutes before slicing.

    Prepare the Asparagus

    Trim the woody ends of the asparagus and set aside.

    Sauté the Asparagus

    In the same skillet, add butter and minced garlic. Once the garlic is fragrant, add the asparagus and sauté for about 5-7 minutes until tender.

    Prepare the Potatoes

    Boil the potatoes in salted water until fork-tender. Drain and let cool slightly.

    Mash the Potatoes

    In a bowl, mash the potatoes with sour cream and chopped chives until smooth. Season with salt and pepper to taste.

    Sauté Shallots

    In the skillet, add finely chopped shallots and sauté until translucent.

    Deglaze the Pan

    Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pan.

    Reduce the Sauce

    Add fresh thyme and let the mixture simmer until reduced by half, about 10-15 minutes.

    Finish the Sauce

    Remove from heat and whisk in butter until melted and the sauce is glossy.
