Prepare the Squid
Rinse the cleaned squid under cold water and pat dry with paper towels. Cut the squid into rings if not already cut.
Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. Mix well.
Coat the Squid
Dip the squid rings first into the egg wash and then coat them in the flour mixture, ensuring they are well coated.
Fry the Squid
Carefully place the coated squid rings into the hot oil in batches, frying for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.
Marinara Sauce
Add Tomatoes and Seasonings
Pour in the crushed tomatoes and add the dried oregano, dried basil, salt, black pepper, and sugar. Stir well to combine.
Simmer the Sauce
Bring the sauce to a simmer and reduce the heat to low. Let it simmer for about 15-20 minutes, stirring occasionally.
Serve
Taste and adjust seasoning if necessary. Serve the fried calamari on a plate with marinara sauce on the side for dipping. Garnish with fresh chopped basil.
