    Prep the Quinoa

    Rinse the quinoa thoroughly under running water. In a small pot, combine quinoa and 1 cup of water. Bring to a boil, cover, and let it simmer for about 15 minutes until the quinoa is fluffy and water is absorbed. Set aside to cool.

    Mash the Black Beans

    In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

    Combine the Ingredients

    Add the cooled quinoa, grated carrot, chopped red onion, minced garlic, cumin, paprika, salt, pepper, and oats to the mashed black beans. Mix thoroughly until all ingredients are evenly combined.

    Form Patties

    Divide the mixture into 4 equal portions and shape each portion into a patty about 1/2 inch thick.

    Cook the Patties

    Heat olive oil in a skillet over medium heat. Cook the patties for 5-6 minutes on each side until golden brown and crispy. Remove from heat and let them cool slightly.

    To assemble, place each patty inside 1 lettuce leaf. Top with a slice of tomato, pickle slices, vegan mayonnaise, and mustard.
