    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin fries, ensuring they are uniform in size for even cooking.

    Soak the Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch, which helps achieve a crispier texture.

    Preheat the Oil

    In a deep pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

    Fry the Potatoes

    Drain the soaked potatoes and pat them dry with paper towels. Fry the potatoes in batches for about 5-7 minutes or until golden brown. Be careful not to overcrowd the pot.

    Season the Fries

    Once cooked, remove the fries and drain on paper towels. While they are still hot, sprinkle with kosher salt and peppercorn melange.
