Seafood Preparation

Prepare Oysters
Shuck the oysters and place them on a bed of ice on a large platter.

Cook Prawns
Boil prawns in salted water for about 3-4 minutes or until pink and cooked through. Cool them in an ice bath and peel.

Prepare Ahi Tuna
Slice the Ahi tuna into thin pieces (about 1 cm thick) and arrange attractively on the platter.

Lobster Tail
Steam the lobster tail for about 8-10 minutes. Once cooked, cool it slightly, cut lengthwise, and display on the platter.
Sushi Preparation

Cook Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook according to package instructions or standard sushi rice preparation.

Roll Spicy California Roll
Lay a sheet of nori on a bamboo mat. Spread a layer of sushi rice over the nori, leaving a border at the top. Add crab meat, sliced avocado, and cucumber. Drizzle with spicy mayo. Roll tightly, slice into 6 pieces.

Arrange Sushi
Place prepared California rolls neatly alongside seafood on the platter.

Make Mignonette Sauce
In a bowl, mix red wine vinegar, finely chopped shallots, and horseradish. Let it sit for at least 15 minutes.

Make Spicy Cocktail Sauce
Combine ketchup with Worcestershire sauce and additional horseradish to taste in a separate bowl.
