Seafood Preparation

    Prepare Oysters

    Rinse oysters under cold water. Place them on a large platter, open side up. Set aside.

    Cook Prawns

    Bring a pot of salted water to a boil. Add prawns and cook for 2-3 minutes or until bright pink and cooked through. Remove and chill in ice water.

    Prepare Ahi Tuna Tataki

    Sear the ahi tuna on all sides for approximately 20 seconds over high heat until just browned on the outside. Cool slightly and slice into thin pieces.

    Cook Lobster Tail

    Split the lobster tail in half lengthwise and steam for 5-7 minutes until fully cooked. Remove the meat and slice into medallions.

Sushi Rolling

    Prepare Sushi Rice

    Rinse sushi rice in cold water until the water runs clear. Cook according to package instructions. Once cooked, let it cool slightly.

    Roll California Sushi

    On a bamboo sushi mat, lay one nori sheet down. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Layer with crab meat, cucumber, and avocado. Drizzle with sriracha sauce. Roll the sushi tightly using the mat. Slice into bite-sized pieces.

Sauce Preparation

    Make Mignonette

    In a small bowl, combine red wine vinegar, finely chopped shallots, and chopped parsley. Mix well. Serve chilled with oysters.

    Prepare Spicy Cocktail Sauce

    In a separate bowl, mix ketchup, horseradish sauce, and lemon juice until well blended. Serve with the prawns.
